1-1/2 lb. sole fileets
salt and pepper to taste
1 tbsp chopped parsely
Lemon Sauce:
1/4 c. lemon juice
1/4 c. water
1 tsp sugar
1 tsp cornstarch
Garnish:
parsley sprig, lemon wedges
Place fillets in lightly oiled baking dish. Sprinkle with salt and pepper tp taste and parsley. Cover and bake in 350°F oven for about 15 minutes. Fish is done when flesh is no longer translucent and flakes readily.
Lemon Sauce: In saucepan, combine lemon juice, water, sugar and cornstarch. Heat, stirring constantly, until mixture boils and thickens. Pour sauce over fillets.
Garnish with parley sprigs and lemon wedges.
